Scallop with Pumpkin Sauce Pasta
   
Ingredients
1/2 box of Del Monte Pumpkin & Carrot Soup
3 tbsps. Del Monte Mixed Vegetables
3 scallops
1 bowl of Macaroni (cooked) (80g)
2 gloves of garlic
1/4 onion
2 tbsps. chopped dried parsley
1/4 bowl of pumpkin (diced)
 
Marinade
A pinch of salt & pepper
 
Steps
1.
Boil the Macaroni according to instruction, deduct 1 minute of the suggested time. Drain the pasta when cooked.

Heat up the pan with shallow oil, sear and brown the scallops for 30 seconds each side, season with a pinch of salt and pepper. Leave them on a plate.
3.
Heat up another pan with some oil, brown the onion and garlic, then add pumpkin and cook till soften.
4.
Add Pumpkin & Carrot Soup in the pan, boil it. Then put the cooked Macaroni and Mixed Vegetables in, season with salt and pepper. Turn up the heat and thicken the sauce.
5.
Sprinkle a pinch of dried parsley, top with the scallops.
